The Disneyland Salad

On Friday night of our trip, we ate at Goofy's Kitchen.  It was fun, and buffet style, so we got to try lots of different food.  I tried fried plantains, teriyaki salmon, and a salad labeled generically "special salad."  It looked good, so I tried it and it was delish!  I recreated it for a barbeque, and everyone thought it tasted like summer. 

1 red bell pepper
1 orange bell pepper
1/2 of a softball sized jicama
1/2 of a walla walla sweet onion
8 green onions
4 ears of corn (if you love corn, use as much as you want!)
1 carton light sour cream
2 tablespoons of taco seasoning (I used Lawry's)

Cook corn. (the corn from Disneyland had been roasted).  Remove from cob.  Chop other veggies small, the same size as the corn.  Combine taco seasoning in the sour cream.  You could probably thin with milk, as the salad in Disneyland had a runnier consistency, but I didn't mind how it came out.  Coat veggies with sour cream mixture.  Chill.

The nicest thing about this salad  is it is adaptable.  Add cilantro (I can't, I think it tastes like soap), tomatoes, acini de pepe (small round) pasta, cucumbers, etc.   You can vary how much seasoning for your taste buds. 

This truly is the epitome of a summer salad, with fresh and crisp ingredients!   Can't wait to make it for our family functions.

Family Update

Yes, I started a blog, and then never posted. Bummer!  
I have lots of ideas for posts, and lots of pics of our little family.  I'll get them on here someday :)

Things have been going well for the Molalla Muffetts.  We have had a busy summer, with lots of fun had by all.  

Ben has been working at BCT and managing the logging at TenMile.  That has resulted in him talking to his uncle. Dean, quite a bit.  Stump calls increased this year, and that is a good sign the economy may be coming back around these parts.  He got his '85 Suburban running really nice with new motor and exhaust.  He hasn't had as much time in Lincoln City as he'd like, but he did manage to ride the "mini-coaster" at Disneyland.  He is still taking expert care of our yard, for which Lacee is thankful!


Quincee will be entering 2nd grade in the fall.  Her teacher is going to be Teacher Barb, her kindergarten teacher.  She is excited.  Teacher Barb is fun, and effective at controlling her class.  Quincee has been swimming a lot this summer, and is almost to level 4.  Her elementary backstroke is picture perfect.  Quincee loves hanging out with her friends, even if there is a fence separating them!  She plays with Eric and Juliann, our next door neighbors, through the chain link fence.  The kids are begging us to cut a door into the chain link.  Quincee's favorite rides at Disneyland were "Screaming" and "Soaring over California."  She was not afraid of any ride.  Quincee is excited to go camping next week, and has enjoyed having friends down at the beach house.


Tillee just turned 4 and will start preschool in September.  She will go 3 days a week now that she is older, and she loves it!  Tillee has also been swimming a lot, and is right on the verge of keeping herself afloat.  She is a sinker.  She has been going to speech class again, and is becoming even easier to understand,  She loves hanging out with Audrey and  Eric and Juliann.  Tillee's favorite ride at Disneyland was the "mini-coaster."  She had lunch with the Princesses at Ariel's Grotto for her birthday, and the whole restaurant serenaded her, with the  Happy Birthday song.  It was very exciting for her.  She couldn't believe all of the princesses were there.  Quincee and Tillee got all of their autographs with photos.  

I am still working at Cutters.  This summer has gone by way too fast!  I had a blast at Disneyland, my favorite ride was Screamin', which I rode with Peeps.  I feel fortunate to have been able to take the girls at this age when they still believe the characters are 'real".  I have spent some great time at the beach house.  Lots of sand time, even took a nap at the bay while the girls played with daddy.  So relaxing.  The rest of the summer will be busy, I really don't even want school to start.  I like having the whole day off with both girls.
